Triple Chocolate Peppermint Cookies

Triple Chocolate Peppermint Cookies

Ingredients
    For Cookies
  • 1 cup butter (softened)
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2-1/2 cup all-purpose flour
  • 3/4 cup unsweetened baking cocoa
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup 60% cacao bittersweet chocolate baking chips
  • White Chocolate Frosting
  • 1/2 cup vanilla or white chocolate chips
  • 4 oz cream cheeese (softened)
  • 3 cups confectioners sugar
  • 1/3 -1/2 cup crushed peppermint candies
Instructions

    In a large mixing bowl, cream butter & sugars together until light and fluffy. Beat in eggs & vanilla.

    Combine the flour, cocoa, salt & baking soda. Gradually add to the creamed mixture & mix well. Stir in the chocolate chips

    Drop by rounded teaspoonfuls 2 inches apart onto an ungreased baking sheet. Bake at 375F for 8-10 minutes or until set. Cool for 2 minutes before removing to wire racks to cool completely

  4. For Frosting

    In a microwave safe bowl, melt vanilla chips in 15 second increments. Cool. In a small mixing bowl, beat cream cheese. Gradually beat in confectioners sugar. Add melted chips, mix well.

    Frost cookies; sprinkle with peppermint candies

Note

If you use a larger cookie scoop (like I did) the cookies may need a little longer cooking time.
