Easy Vegetable Rice
  • 1 carrot (diced small)
  • 1/4 onion (diced small)
  • 1/2 green bell pepper (diced small)
  • 2 tablespoons butter
  • 1-1/2 uncooked instant white rice
  • 1-1/4 hot water
  • 2 chicken bouillon cubes
  • salt & pepper (to taste)
  1. In a 13 x 9 inch casserole dish, combine the carrots, onion, green pepper and butter. Cover with lid or plastic wrap and microwave for 6 minutes. Stirring the vegetables halfway through. (Caution! Be very careful of the steam!)

  2. Add chicken bouillon to hot water and stir to combine. Add chicken broth, salt & pepper and rice to the casserole dish. Cover and cook another 8 minutes, stopping to stir the rice halfway through. Let the rice sit, covered for 5 minutes after done cooking. Serve.

  1. The original recipe called for a small can of diced or minced mushrooms, drained. Feel free to add that to the mix with the rice if desired!
