Easy Vegetable Rice
In a 13 x 9 inch casserole dish, combine the carrots, onion, green pepper and butter. Cover with lid or plastic wrap and microwave for 6 minutes. Stirring the vegetables halfway through. (Caution! Be very careful of the steam!)
Add chicken bouillon to hot water and stir to combine. Add chicken broth, salt & pepper and rice to the casserole dish. Cover and cook another 8 minutes, stopping to stir the rice halfway through. Let the rice sit, covered for 5 minutes after done cooking. Serve.
- The original recipe called for a small can of diced or minced mushrooms, drained. Feel free to add that to the mix with the rice if desired!
