How many of you run your kids around so much you would definitely qualify for a “Mom Taxi” sign on your vehicle? I should paint my mini-van Yellow.
Between the four of my kiddos, we bus them around to: gymnastic lessons, cheerleading practices & games, basketball practice & games, volleyball practices & games, track practice & meets, orchestra lessons, concerts and private music lessons. OMG! Writing it out like that makes me sweat.
….and I didn’t even list things like {dentist, doctor or optometrist}
Needless to say, we have an absolute CRAZY/INSANE schedule almost every night of the week.
Its easier when Kris is home, because he helps cook dinner. And he’s a FABULOUS cook. {love you, honey!} But even with help, getting something cooked and on the table before {this kid to cheer by 7:30, oh but orchestra lessons start all the way across town at 6:15…..} insaneness begins can be a bit of a challenge.

This is a pretty versatile recipe. You could definitely change up the veggies if broccoli isn’t your cup of tea.
What is your go-to recipe for crazy/busy weeknights?
