Have you gotten your Girl Scout cookies yet this year? I could’ve sworn you start to see them out and about right after Valentine’s Day, but I haven’t seen any yet! And my little Daisy hasn’t come back by with her wagon full of Thin Mints and Samoa’s that I ordered.

This is really bumming me out. Not that I {need!} the cookies, but well….. I’m REALLY looking forward to that first box of complete glutton hoarding! {its a little like Christmas and your birthday all at once, something that happens only once a year and its totally OK to eat an entire box of cookies all by yourself!}

If you HAVE gotten your Girl Scout cookies (you should brag) and use some of those fabulous Thin Mints to make this luscious Lucky Leprechaun Parfait! Of course, if you’re like me and twiddling your thumbs WAITING on your Thin Mints, you can kind of cheat with Keebler’s knock-off Grasshopper cookies. Those will work too!

These are just a fun treat for the kiddos on St. Patrick’s Day and super easy to assemble!

So, the truth: Are you more likely to save your GS Cookies and make them last through the year, or plow through them with greedy delight? I know which bracket I fall under!

Ingredients

Instructions

  1. Cut the brownies into small bite-size pieces and arrange half in the bottom of four parfait cups.

  2. Spoon the double chocolate pudding over the brownie. Sprinkle the crushed cookies over the chocolate pudding. Add the rest of the brownie over the chocolate pudding.

  3. Add a drop of green food coloring to the vanilla pudding and stir well until the pudding is green. Spoon green pudding over the crushed cookie layer.

  4. Top the parfait with whipped topping and sprinkles!

Note

I used Reddi-Whip and it “deflated” quickly, I would use Cool-Whip next time!
