
Lazy Butter Biscuits

Preheat oven to 425 degrees F.

Spray an 8 or 9 inch round cake pan with cooking spray. Set aside.

Combine flour, salt & baking powder in the bowl of a stand mixer. Cut in the shortening with a pastry blender or two knives until the mixture is coarse and the shortening is crumbled in the flour.

Using your dough hook attachment on LOW speed, add the milk and knead until dough ball is formed. {For those without a mixer, you can just knead by hand or wooden spoon}

Using a large cookie dough scoop or a 1/3 measuring cup, scoop a ball of dough and plop into prepared baking pan. Repeat until all dough is used, the biscuits should be touching in the pan.

Bake at 425 degrees F for about 12 minutes. Remove from oven, brush tops with melted butter and return to oven. Bake for an additional 4-5 minutes until the tops of your biscuits are golden.

Serve warm with butter and jelly.
