I love good food that’s easy to put together and that pleases my entire family. This Fiesta Chicken Soup certainly qualified!
I was drawn to this recipe immediately when I saw that it had hominy in it. Oh man, oh man….we sure do love some hominy in this house! Growing up, we often ate hominy {found in a can, in the canned vegetable isle…usually next to the corn. Available in yellow or white – its good both ways} so I’ve always known what it was. I can’t tell you how many times we’ve had company for dinner, served hominy and it was their first time eating it! I don’t think I’ve met anyone yet who didn’t like it.
And I think Kris could eat it every night. Same goes for the kids.
I just knew this was going to be a hit.
It totally was! I adjusted the original recipe a little. I’m so in love with black beans that I think every Mexican-style soup is better with them in it! I got a lot of “mm.. hmmm.. sooo good!” as the kids were eating. I think they liked it!
