Mid-Week nights can be crazy busy, shuffling kids around, or maybe you have after-work meetings or church. The list is endless in our full and busy lives! On nights like this when its hard to get a decent meal on the table, too many times we reach for what is fast and easy. Unfortunately fast and easy isn’t always what’s best for us!

I think its always a good idea to have a few recipes under your sleeve that are not only fast and easy… but also HEALTHY to help us maintain a good nutrition balance, even on busy nights. These Turkey Sloppy Joes are a huge lifesaver and delicious to boot!

Enter the Turkey Sloppy Joe: a recipe from Rachael Ray from quite a while back when I still used to watch 30 Minute Meals on TV, my girls snuggled up with me on the couch… back when they still had all their baby teeth.. {sigh} Why do all my memories make me want to cry these days? Now its boys and braces. At least my girls still like to hang with me in the kitchen!

These sloppy sandwiches have stuck with us for awhile. I like to serve them with cut up raw veggies or baked potato chips! Double the recipe for a group larger than 4.

Ingredients

Instructions

  1. In a skillet, drizzle olive oil, then add ground turkey, red peppers & onions. Crumble the meat with your spoon and cook the mix until the turkey is no longer pink and the vegetables are tender. Drain.

  2. In a medium bowl, combine tomato sauce, brown sugar, Montreal seasoning and Worcestershire. Stir well to combine.

  3. Pour tomato sauce mixture into turkey meat mixture and stir to combine. Cook on low to simmer for about 5 minutes or until the sauce is heated through. Serve on hamburger buns.
